Isn’t this cute? The kids had fun with this one.
I’ve never been a fan of regular sushi, but this one I can do. Getting the cucumber the right thickness is key. I need more practice, but it was sure fun to make!
- 1-2 cucumbers (I used large cucumbers, but I think the mini cucumbers that I’ve seen at Costco in bags would work the best!)
- 1/4-1/2 cup Tofutti
- 1 carrot shredded
- 1/2 cup raisins
Slice cucumber in about 1/8 inch strips. (I wished I had a cheese slicer for this, let me know if you have one and it worked for this!) cut each slice in half, especially if you have a really long cucumber.
Spread a very small (about a 1/2 teaspoon, just so the raisins will stick) in the middle of the cucumber and place a few raisins inside.
Put a small amount of shredded carrots on each end of the cucumber, and roll. Pin with a toothpick.
These are best served immediately, they tend to get a little watery on the plate if kept out too long. Store in refrigerator.
