Lunch is NOT my favorite meal of the day. It’s seems to just be in the middle of everything, and I never want to take any time to prepare it. If you are like me, you will like this little dish.
I have recently fallen in love with pita bread! This wrap is so yum, yet so simple! I even warmed up the pita with spread hummus in the microwave for a few seconds before stuffing in the plethora of veggies which made it even more divine. Don’t let my imagination on the veggie combo limit you! I’d love to know what some of your faves are!
- Pita Bread
- cherry tomatoes
- green olives
- spring lettuce
- olive oil (optional)
- lemon juice
- italian seasoning
- Chop up veggies into a bowl and mix together with desired amount of oil and seasonings (I actually made a lot and stored in a tupperware in the fridge for later. If you do this though, don’t add the olive oil or lemon juice until right before eating.)
- Spread desired amount of hummus onto pita bread and throw in the microwave for a few seconds until warm.
- Stuff as much veggies onto your pita as you can fit, fold over, and stuff into face. It’s good tasting, and GOOD for you! yea!
