What’s better than fluffy blueberry pancakes?
VEGAN fluffy blueberry pancakes! :)
- 1 cup unbleached white flour
- 1 Tablespoon baking powder
- 1 Tablespoon sugar
- 1/8 teaspoon salt
- 1 Tablespoon ground flax (optional)
- 1 Tablespoon oil
- 1 1/2 cup non dairy milk ( i think almond works best)
- 1/2 Tablespoon vanilla
- 1/2 cup fresh blueberries
Mix all dry ingredients in a bowl, then add milk and vanilla. whisk together until batter is smooth. Don’t overmix. Slowly fold in blueberries.
Spray a griddle or frying pan with cooking spray. Drop 1/4 cup of batter at a time onto pan/griddle on medium high heat. When bubbles appear on the surface of the pancake, approximately 3 minutes, flip, and cook the other side for another 2 minutes.
NOTE! I have realized that letting this batter sit for about 5-10 min makes it firm up a bit and makes the cakes more fluffy. Give it a try…….
NOTE #2: I have made these with half whole wheat flour and they turned out great. Also, this recipe doubles just fine!
