I find this Maya Kaimal curry simmer sauce at my local Costco. It’s such a time saver!
I like to pour the curry in a giant pan, then add 1/2 of a diced onion, a couple chopped carrots, one diced green and/or red pepper, canned bamboo, and one large uncooked chopped potato. I let it simmer on the stove with the top on until veggies are tender, (around 20-30 min depending on how big the veggies are). Sometimes while the veggies are simmering, I pan fry some extra firm tofu cubes and mix in the sauce at the end when the veggies are done. Serve over rice or noodles. YUM!
